Handwa Atta (500g)
Ingredients: Rice, Chana Dal, Tur Dal, Masoor Dal, Moog Dal, Udad Dal.
In 1 portion of handwa atta add 1½ portion of water and 1 tbs curd. Mix well and put in warm place to ferment for 8 hours. In fermented handwa batter mix grated ginger, grated dudhi (bottle gourd), green chilli, salt. Heat oil in a pan and add mustard seeds (rai), sesame seeds (teel), asafoetida, curry leaves, turmeric, dry red chillies to make tadka (tempering). Pour and spread thick layer of handwa batter in the pan. Cook on low flame till it becomes golden brown. Turn and cook on the other side as well. Serve with green chutney. 500g makes apprx. 8-10 Handwas.
